Barricato al Pepe is an Italian hard cow’s milk cheese that gets its name from the oak wine barrels in which it is aged for a minimum of six months. This firm pasteurized cow’s milk cheese from Veneto is made by Sergio, the famed producer of Sottocenere®. “Barricato” refers to the method of aging this cow’s milk cheese in barrels. After an initial 90 day aging, he buries the wheels in black pepper and places them in wine barrels to finish maturing. The black peppercorns add a lively kick without overwhelming the buttery paste. Wine residue from the barrels contributes a hint of fruit, contributing to a full, round flavor.
